Locanda Sotto gli Archi – Restaurant
The various dishes being re-suggested at the “Locanda sotto gli Archi” are surging from the most recent ethnographical research taking place in the region of Abruzzo. Drawn up from the memories of the people in this area, these dishes were handed down for hundreds of years from within the homes of many and they are the witness accounts of a cuisine solely selected by the availability, periodicity, nutritional and therapeutic value of their ingredients.
The division of various courses (antipasto or starter, first course, main course, etc.) was reserved only for large gatherings or events and was intended to be an distraction to the everyday way of life. It was an occasion to “waste”, a propitiatory rite of future abundance.
The meals that were served daily were presented in the form of one course around which the family gathered to share this most important union of the day. In this dish, the housewife took advantage of all of her wisdom of the domestic world, leaving nothing out: From the ingredient search, to cooking and choosing the right materials in which to store these and finally, presentation at the dinner table.
Despite the fact that these communities had to base their own existence by exploiting almost everything they produced in their poor soils, their cooking shows a great variety of authentic flavours that have long disappeared.
The restoration of materials and traditions taken from the ethnographic data has allowed for the repositioning of a new and unique culinary experience that dates back from an era that entrusted in its food, authenticity and profound symbolism.
